Lady Marmalade Champagne Cocktail

This is a really easy variation on the classic French 75 cocktail, with marmalade substituting for the simple syrup. Most people would have marmalade jam lying around so for a quick drink, so if you don’t have ready made simple syrup at hand, or don’t want to go to that trouble, give this a try! Great with rich dishes like slow braised fatty pork belly and of course, you can add more champagne/prosecco/sparkling if you want more fizz. Pro-tip - here’s already enough sweetness in the gin base so unless you want a super sweet cocktail, try and go for a drier style of sparkling wine though.
